Ôtoulouse pronounced “ohtooloose” comes from an ancient dialect; Occitan, once spoken in the regions of Languedoc Roussillon and Midi-Pyrénées.
Ô means at or in. In this case, ôtoulouse means at Toulouse. Toulouse, the capital of Occitanie, is where Chef Christophe Santos was born. Rachelle, on the other hand, is from Burgundy.
